How Shaved Ice Took Over the Dessert Menu

Whether you know it as Japanese kakigori, Korean patbingsu, Hawaiian shave ice, Italian granita, Indian ice gola or the American snow cone, a mound of shaved ice drenched in syrup and served on a hot day is a near-universal delight. Erickson serves kiwi-flavored shaved ice atop a creamy jasmine tea custard. At Bar Maze, which offers a cocktail-paired tasting menu in Honolulu, the head chef Ki Chung, 32, combines sweet corn pudding and sesame streusel with ice shaved from the same clear blocks used for drinks — the dessert is finished tableside with a pour of black sesame orgeat. For Srijith Gopinathan, 46, the chef and owner of Copra in San Francisco, shaved ice is infused with nostalgia. Dumpling Daughter CEO Nadia Liu Spellman didn't grow up in your average family-owned restaurant. WELLINGTON, June 20 (Reuters) - A man wielding an axe entered three Chinese restaurants on Monday night in New Zealand’s largest city Auckland, sending four people to hospital, authorities and local media reported. One victim was discharged and three remain in stable condition, North Shore and Auckland hospital spokespeople said on Tuesday. Local media reported that the man went into three Chinese restaurants — Zhangliang Malatang, Yues Dumpling Kitchen and Maya Hotpot — and started randomly attacking people with an axe around 9 p.m. on Monday night. A witness told local news organisation Radio New Zealand that she was eating at Maya Hotpot with a friend when a man came at her friend with the axe. New Zealand Police said they had arrested a 24-year-old man and he was due to appear in court on Tuesday on a charge of wounding with intent to cause grievous bodily harm.

The chefs, with Palestinian roots, focused on traditional techniques such as how to turn the poisonous dark purple Palestine lily, which blooms in the spring, into an ingredient for soups and a traditional medicine. Mirna Bamieh, a chef and founder of the Palestine Hosting Society, which curates and seeks to revive traditional Palestinian recipes, discovered a local variant of the "kubeh" meat dumpling frequently associated with Kurdish kitchens. "It was super fascinating because you know, we always think that we don't have a kubeh culture in Palestine,” Bamieh said.

TBILISI, April 12 (Reuters) - In the mountainous Caucasus nation of Georgia, dumpling-eating is a serious affair. "I'm not Georgian, but the first rule I learnt when I came to Georgia was how to eat khinkali," says Sergei Shirinsky, who dubs himself a connoisseur. That's the first rule," Shirinsky says. "If you add something other than pepper you can go to prison in Georgia," Shirinsky jokes as he manoeuvres the fluffy parcel past his moustache, completing a demonstration of how khinkali should be eaten. The exact origins of the dumpling in Georgia are unclear, but it has been prepared in towns and villages across the country for centuries and different regions still bicker over who invented it and who makes it best.
Taiwan Dumpling King Steamed His Way to Global Renown

Yang Bing-Yi founded a global chain of restaurants known for soup dumplings. In the early 1970s, Yang Bing-Yi was a struggling seller of cooking oil in Taipei. As demand for his bottled peanut oil sank, Mr. Yang and his wife, Lai Pen-Mei, diversified in 1972 by offering soup dumplings and other Chinese delicacies. These treats proved so popular that the Yangs abandoned the cooking-oil business to focus on Shanghai-style dumplings and other food, sold at a restaurant called Din Tai Fung. Then the New York Times included Din Tai Fung in an article extolling 10 “top-notch tables” around the world.
Yang Bing-yi, who set up the Taiwanese restaurant chain Din Tai Fung, “passed away peacefully” at the age of 96, the company said in a statement Saturday. He opened a small shop in Taiwan’s capital Taipei with his wife, naming it Din Tai Fung and selling cooking oil and Xiao Long Bao, steamed Chinese soup dumplings often made with pork. It expanded into a franchise, with outlets in the United States, United Kingdom, Australia, United Arab Emirates, South Korea and Singapore. Steamed pork dumplings served at Din Tai Fung's Hong Kong branch. Its restaurant at the Taipei 101 skyscraper hosted Hollywood star Tom Cruise in 2013, who dined and joined chefs to make soup dumplings.
